I think the "proper" way to do it is to use encrypted messages (which Apple explains here) but this requires some set-up.
If it's a one-off, it's easier to put the information into a document and then protect the document. Pages and Numbers do this via the 'Set Password' choice on the File menu. I'm sure other apps can do it too.
