those golden rules ...

I've forgotten them all, and cocked it up somehow, so I need a fresh start ... So when a chap buys a new (refurbished) Mac what should he do?
I have an old Mini running Mountain Lion, and a new Mini running El Capitan. As the new Mini will not run the software versions I prefer, (Aperture, iMovie HD, Affinity Designer, Pages, and something else I forget), I bought a refurbished 27" iMac mid 2010 with 3TB hard drive and 32 GB of memory, running Mountain Lion.

Clone the old Mini with your preferred software to the iMac???

Probably equivalent to Euan's suggestion but:
Ensure that the new Mac's OS X etc is up to date, then use Migration Assistant to copy your apps and files?

Thank you Euan and Tony, I shall do that today using Migration Assistant.
