Can anyone tell me how important or otherwise the ‘pressure sensitive’ feature is on some Apple pencils? Is it a must-have for creating iPad based art?

Speaking a someone that doesn't possess an Apple Pencil...
I think the pressure of the pencil can control things like the thickness or opacity of a stroke as you draw it. That would be quite hard to do otherwise but does depend on whether what you're drawing actually needs it.
I suggest you start with the software you intend to use and check its support for the Pencil's features. That would probably tell you what you would be missing out on.
Since Euan hasn't said anything about it yet, I'll remind you that that the entire Affinity suite is now available at no cost for Mac and iPad. Affinity Draw is excellent, their new combined package may be even better.
